Buying a Subaru powered 356 replica

I recently sold my 1964 356C and I'm looking to replace it with a Subaru powered 356 Coupe. I'm a newbie to the replica market and I have some questions that I hope the members will be kind enough to answer. I live in Las Vegas, so, who would do the mechanical work on one of these cars. Can a Subaru mechanic work on the engine or is someone specialized needed? Are JPS cars solid and dependable? If I don't go with Subaru power, what size air-cooled engine would you recommend for the extremely hot summers for AC and reduced overheating? Thanks
