I had some parts on mine (valve covers and other bits) painted Oslo blue to match the car. Others (intake manifold, etc.) were done in a contrasting gray, while the rest was in bare metal or black plastic. It looks nice. Ron Mullis, owner of the Blue Angels tribute 550, had his done in the same blue and yellow theme as the body of his car. Mike Fincher will probably build your engine and you can trust him to lead you through the process. He showed me pictures and color samples and is easy to work with.
