Subaru Engine Build Checklist JPS

I was looking at putting a deposit on a new build. JPS seems to have good pricing vs Vintage and Intermeccanica. They send me a build sheet and I kind of went down the line and checked the boxes that I felt applied. I am kind of thinking a silver car with tan interior (black is hot in Florida and wife does not like red), charcoal carpet. LED lights, black wheels with half moons, subaru motor/associated transmission. Does anyone have any experience with other builders or JPS one way or another? I know someone mentioned Intermecannica being the gold standard but it seems there are $63k to start and my build sheet with JPS (attached) is around 42,500 so prob a couple thousand in upgrades they will recommend me to add, 45k out the door perhaps. There are zero speedsters for sale here in Florida so selling my red CMC would not be hard at all and would be fairly easy to get 35k+ especially if in no hurry and wait for the right party. It has 1300 miles on rebuild. AC would be nice and since I am not a mechanical person, computer is more my business the tinkering on the VW motor at $100/hour will add up to a new car with subaru real quick.
