The knobs that Wolfgang shows, above, are all for VW sedans and while a lot of us use them (me included) they're not "Porsche" knobs, like these:

Those are available from Stoddard's, Sierra Madre and others, but Carey Hines at Special Edition (Beck) also sells them as parts.

Flipping the switches around on the dash is solely dependent upon how much slack there is in the current wiring harness.  You want to move the wiper and ignition/starter to the left of the steering column?  Sure - if the wires reach.  Want the headlights to the right of the column down close to the column like the originals?  Sure, but then you'll have to figure out what to do with the out-of-place switch holes now vacated that were installed by the builder.

So all this can be done, but there is more to it than just moving switches around.  

Just pick the year you like and have at it.

Also, with all of the Porsche sold in Europe over the decades, someone must be selling period-correct in Europe so you can avoid the VAT coming from the USA.
