Off set is going to be your issue. I'd mock up some wheels in cardboard to try. Not much available in 4 bolt VW pattern. There are disc rotor and drums in the 5 bolt Chevy pattern. Going to take quite and engine to support that width. I could see 10" and 8" in front. Doubt VW wheel bearings will last long. Maybe look at 944 suspension parts.
