Yes! I took absolutley everything off my V.S. before painting. Just be real careful when putting the windshield back on. Test fit it a couple of times before it goes to the paint shop. I made the mistake of manhandling my winshield back on and chipped the paint.
Good luck, a rolling kit is the best way to go!
