I want someone(s) that know how to keep it running beautifully as I intend to take it in regularly.   You bring up a good point though.  I do like high performance (my other car is an F Type) so maybe i should see someone who also knows how to make performance enhancing modifications.   I'll follow the other useful replies but an eye toward satisfying both goals.  Thanks for the suggestions.

Rachel, I am based over the Bay in Emeryville and I did the same research just over a year ago. I ended up using Ken @ Precision People's Car Repair in Berkeley, (http://precisionpeoplescarrepair.com). I can't speak to serious engine mods but Ken has been working on air cooled VW/Porsche's for 40 years and has given me fantastic service and fair pricing. His shop is always busy and most of his work seems to come via word of mouth which is always a good indication of someone's worth. Best Chris
