Yes, use hydraulic, the cable routing is less than ideal with the Suby and as Ed said use a slave saver bracket to realign the slave with the clutch arm

Shifter, use the PBS style made by Greg at VMC.  It is a billet piece and much improved over the PBS but the same style overall.  It is the standard shifter for both VM and Beck.

It would depend on his rear suspension.  Although I have heard rumor of some Folts style axle conversions for the sand rails with a Suby gearbox, I would not consider them a safe alternative or street reliable for a swing axle car.
