"Sport" or "Monza" exhaust will be a bit louder, Nesta, and should be fine if you have a single carburetor on a mostly stock (1,600cc) engine.
If your friends talk you into dual carbs, an exhaust system with slightly larger diameter pipes wouldn't hurt anything, either (and be louder).
It sounds like you're having fun, no matter what!

...the next thing I´d like to do is work in the "rain pan" of the deck lid grille but I don´t know wheter I cut , mount a plexi cover, mesh or something like that below the grille.
I don´t know if it could affect in the airflow aircooled (hot issues).
I´ve seen some cars without it like Emorys Outlaw and others with a custom plexi with holes like Singer.
Any advice, opinions?

I recently upgraded to a Vintage Speed shifter as well. Same model but in black. How much nicer than the stock VW shifter!! Tony

If you only drive on sunny weather you could do away with it entirely and it will improve your airflow; otherwise my advice is to leave it alone.
I made a panel out of aluminum to replicate the factory Carrera screen.
